mmmm..these are delicious

1 1/2 lbs thawed ground beef
1 finely chopped onion/handful of chives
1 egg
3 tbsp Epicures 3 onion dip mix
1 cup shredded cheese
dash of salt and pepper
2 tbsp bbq sauce
1 tsp garlic powder
Mix all together in a bowl until well blended. Press down evenly and score into 4 parts.

Take one section at a time and roll into a ball. Flatten and hollow out the center a little bit to allow for even cooking. This way your center will be done when the outsides are done:)

French Onion Topping
1 tbsp EVOO
1 tbsp butter
2 finely chopped onions
1 tbsp flour
1/2 cup beef broth

Heat EVOO and butter in a skillet on med heat. Add onions, lower heat a little and caramalize, 25-30 minutes. Mix in flour to create what some might call a paste. Gradually add in beef broth and let simmer for 5-10 minutes until thick.
BBQ Cheeseburger and top with French Onion Topping and sprinkle with parmesan cheese. Enjoy:)

some recipes i would like to share with you this summer include:
-turtle cheesecake
-cinnamon swirl bread (jerrah yours looked great!)
-canned dill pickles
-home made relish
-some sort of delicious soup

sooo….who doesnt like a good ice cream sandwich! YUM! these were quite time consuming but worth it!

To make the Cookie:
1 pkg chocolate cake mix
1/4 cup shortening
1/4 cup butter, softened
1 egg
1 tbsp water
1 tsp vanilla
Combine all the above ingredients, until well blended. Roll out the dough between two pieces of waxed paper, until about 1/4 inch thickish. Remove the top piece of waxed paper and cut out circles using a cup or cutter. Place on a baking sheet with parchment still underneath. Make sure you dont have them too close together they do blow up a little bit. Repeat with the remainder of the dough. Bake at 350 for 8-10 minutes or until puffed. Prick holes with a fork.

I used vanilla ice cream in the centre, but im sure other flavors would be delicious too, like a caramel or double chocolate. Or try adding oreos or cookie dough into your vanilla ice cream for a fun twist:)
Take the ice cream out of the freezer and whip with your mixer ( only do this if you have a good quality mixer or if you are not attached to your $10 betty crocker mixer)

Using a medium sized ice cream scoop, scoop ice cream in between two cooled cookies. Wrap in saran wrap and stick in the freezer overnight. Enjoy your delicious ice cream sandwiches!
